My conversion team cannot find any custom field data in the tables that I mentioned. Is the custom data included in incremental backups or only full backups?

I'm not actually looking at the data, but just acting as a go between for the people running the conversion for us. There's about 65 fields that I'm trying to locate, and they're all spread out between all of the different record categories. The categories I need are as follows:

Candidate
Candidate List
Company
Contact
Contact List
Job
Placement

I am aware of the Field Maps tool, however we are having trouble finding the actual location of the fields and the data associated within the backup that we were given. Is there a specific structure path that all the custom fields are located in?

Location of User Defined Fields in backup

We are running a data conversion, and trying to get the User Defined Fields to map up correctly. However, in order to do that, we need to know the structure of the Fields and where they are located in the database. Anyone know where they can be found?
